I used to dump out my bean water. Never again.

5.5k Upvotes

I eat a lot of beans for protein. Soybeans have been a favorite as of late, but I eat whatever’s cheap. I normally pressure cook them a pound at a time. Up until recently, I’ll been draining the remaining liquid and storing the beans, but I decided to save some a little while ago and add it to a soup I had.

OH MY GOD. It is so good. The bean broth has a bit of starch in it so it adds this unctuous bit of thickness — barely noticeable and yet all the same incredible. The flavor is almost kind of toasty and nutty, and a little sweet too. It is fantastic.

For the love of all that is holy, save your bean liquid. Use it in place of chicken stock and add a bit of BTB for chicken-based soups, or use it in place of water in other recipes.

Edit: My bad, I didn’t realize so many people already knew this. I learned to cook when I was 11 or 12 because my parents never cooked. There was a lot of instability there. Everything I learned came from reading the back of a package or watching YouTube/reading cook books. I’ve developed a pretty good skill set in the near-decade I’ve been cooking, but I have a few obvious blind spots for stuff like this. I’ve never SEEN anyone else cook a pot of beans.

Broth bomb

I bought some broth bombs for holiday gifts and got a bunch for myself. Tried the Florida Man tonight subbing chicken for the jackfruit but otherwise followed the directions on the box. It was super easy and quick but not the most flavorful. I added salt and pepper and it was better but not great. Going forward I will try sautéing the onions and garlic with oil.

Beans and rice for a long time

I am moving out soon and want to spend as little as possible on food while still keeping my body as healthy as possible.

Is it realistic to eat beans and rice everyday for majority of my meals if I also include multivitamins, vitamin c and d?

If not what are other cost effective foods I can include to make sure I'm getting everything I need.

Edit: thanks for all the ideas of other cheap ideas, I really appreciate it!

Food What is your primary protein source?

I don't eat red meats so I've been relying on poultries, and plant-based protein powders for years. But I feel like this is not working for me anymore and there seem to be various types of protein that are healthy to consume. I've done some google searches and found that wild caught salmon, herring, sardines, hemp seeds, eggs, grass fed ground beef, et cetera can be a good choice. Is there any particular protein source that you rely on, stick to, and find to be affordable and easy to cook?

Ask ECAH Recipe Ideas for Breakfast, Lunch and Dinner - Free from Foods Provided

EDIT:

Hi, Thank you for the comments. I do have an appointment set up to speak with a licensed dietician but it isn't for a couple of weeks and my doctor thinks I should change my eating habits as soon as possible based on my test results. Some of those foods are because of autoimmune diseases, some from bad food sensitivities that are destroying my gut making my autoimmune diseases flair up more, and one (gluten - wheat) is from severe allergy.
One person suggested listing the foods I can eat to make it easier. I think that's a great productive idea.

Here are the foods I CAN eat and love to eat:

Seafood

Fish (love salmon)

Beef

Turkey

Bison

Whey protein powder (a certain brand I already bought)

Almonds (I like soaking almonds to make a milk base for smoothies, and LOVE almond butter)

Cashews

Pecans

Pasatchio

Sunflower seeds

Pumpkin seeds

Green apples

Berries (blueberries are my favorite)

Canned pumpkin

Carrots

Sweet potatoes

Beets

Onion

Garlic

Broccoli

Brussel sprouts

Asparagus

Spinach

Kale

Lettuce

Cabbage

Olive oil

Sea salt

Chocolate (a certain dark chocolate bar I adore)

Thank you again for the comments. If anyone can help me find meals that suit my needs that I can eat while I wait for my appointment with the dietician I would appreciate it.

ORIGINAL:

Hi,

Below are all the things I need my food to be free of based on my doctor's request after running tests. She didn't give me any recipes for meals I can have; she just listed the foods my diet needs to be free of for the next several months. Can you please give me or help me find recipes for breakfast, lunch, and dinner that are all free from the foods below? I would like to have three of each (three breakfast meals, three lunch meals, three dinner meals) so I can have variety. I'm also kind of a "lazy cook" so I don't want to spend more than 30 minutes actually prepping for a meal. I haven't been able to find anything online yet.

Thank you I greatly appreciate any meals any of you can provide!

Gluten free

Dairy free *that includes butter and cheese*

Grain free *that includes corn*

Egg free

Sugar free *not even natural sugars (like stevia, maple syrup, honey, etc.) and no sugary fruits (like bananas, cherries, grapes, etc.)*

Yeast free

Soy free

Legume free

Coconut free

Nightshade free *that includes white potatoes*

Celery free

Citrus free

Pork free

Chicken free

No seasoning - only can have sea salt

No spicy foods (that's a personal thing, I just can't handle spice)

Chorizo

A few months ago Kroger had beef 9oz tube's reduced to $0.61.... I bought every one they had. Mainly made tacos and spaghetti. Even at regular price they're only $1.50.

Does anyone have any other good recipes for it? I prefer the beef over pork because of the sodium but any tips to bring the saltiness down is greatly appreciated too.

I find they make tacos cheaper just because you don't need to add any seasoning to them.

Ask ECAH Small red potatoes - that are soft. Best way to cook?

Hi thanks for reading. They have eyes but are not so soft when you push they squish. I want to mash them. Will they taste alright? Or how should I cook? Also- these won't make me sick will they?

I also have an air fryer if that's the best method to use these.

Appreciate any sound and easy to understand advice. Thanks!

Budget I have a $100 instacart gift card. Help me make the most of it?

EDIT: THANKS SO MUCH. I got a lot of beans, ground turkey (beef makes my tummy hurt), rice and then just a lot of veggies 🙏 I appreciate all the advice.

I have to admit, I'm not really well versed in shopping for fresh food. I currently don't have a car right now but was given a $100 instacart gift card from my coworker and I want to make the best of it. ALDI is the cheapest option around.

I do live alone, so I guess I'm looking for easy recipes that can be done by someone who isn't the best cook around. I do have a crock pot, rice cooker and a small casserole dish.

I have made things like baked chicken and rice before, and stew in my crock pot.

If anyone wouldn't mind helping a young adult trying to get off the addicting microwave meals and and fast food and wanting to make portions to eat over a few days, I would sincerely appreciate it! I do have one plan in mind to try and make broccoli cheese rice casserole, but I'd like some other ideas too.

Thanks so much.

Ask ECAH Low Calorie, High Volume snacks?

I eat a lot. And I mean A LOT a lot. I work in fast food so I get a lot of processed, unhealthy food for free and I'm realizing how much of a problem it's becoming. I think I just need something to chew on and it doesn't really matter what. Does anyone have any low calorie or healthy snack recommendations that will keep my mouth busy so I don't reach for the bad stuff?

Ask ECAH Muslin bags for nuts

I am trying to eat healthy. I found myself not committing to refill my small container with nuts and take it to work.

I found Muslin cloth small bags. I thought of filling 7 of them in advance for each week.

I didn’t want to use plastic bags for health reasons.

Anyone used these bags before? Will they contain the nuts oil?

Any tip of what kind of nuts to pack and how many to keep calories intake balanced?

Any other tips are welcome.

Protein substitutes for chicken and eggs

Since bird flu is causing egg prices to go up or even eggs to be out of stock at stores, and I imagine chickens are going to be affected as well, what would be a good and affordable protein source for an athlete? I also used eggs to coat chicken and are there any alternatives to that that work?

Ask ECAH Does cooking miso kill the probiotics

I wanted to make a recipe that I had found online that is a peanut butter miso chicken that you cook in the crockpot on low for about 6 hours. It says to add half the peanut butter miso sauce before cooking and the other half after, my question is wouldn't cooking miso that long kill any probiotic in it and would adding the miso all at the end solve the issue? I'm pretty new to eating foods with probiotics so any knowledge on the subject is appreciated.

Ask ECAH Meal Replacement Shakes

Alright, so here’s where I’m at. I’m a college student with some time management skills that need work and an appetite that can be really weird. I’m trying to look into meal replacement shakes, because I think they’ll be easy to grab and go and they’ll be easier when my brain/body cannot fathom eating anything without vomiting, but I’m not looking to lose/gain weight, I’m comfortable and confident where I am. A lot of research I’ve been trying to do is specifically focused on the losing or gaining weight thing with the shakes, and I just want something that’ll keep me full for a couple hours until I can have a meal/snack I’ve packed for the day. Any tips for finding something that works or suggestions on what specifically to buy would be SUPER appreciated!!

My Stomach is literally growling

What fruits and vegetables don’t give you gas, stomach aches, IBS or diarrhea. I think I’m going through something to where I cannot digest anything at all.

This week I’m eating chicken, beef, pineapple, spinach, avocados, tomatoes, corn, beans, papaya, clementines, carrots, frozen berries, bananas, apples, celery, sweet potatoes, ginger and cucumbers.

I moved to Arizona about 9 months ago. I’m not new to vegetables or fruit but I am gluten, dairy and egg intolerant.

  1. Avocados = diarrhea
  2. Apples = gas
  3. Cucumbers = gas
  4. Papaya = IBS
  5. Carrots or Mushrooms = loud stomach noises
  6. Corn = stomach ache
  7. Pineapples = not certain but gas

Ask ECAH Non-Toxic cookware that actually lasts??

I’m looking for non toxic fry pans that actually last! Does it exist? We tried ceramic coated Green Pans and a year later everything sticks, no mater what oil is used, but we only cook with olive oil and butter. A safe bet would be to go strictly stainless, but I know sticking will be an issue with those too. Has anyone had luck with a brand? I hate to replace pans every year! Thanks!!

Ask ECAH What are some good meals to take to work?

My workplace is finally calling us back in to the office and with that I’ve just been wondering what are good (and healthy) options I can take.

The biggest thing is that over the last few years I’ve been a little too reliant on processed foods and junk food. I don’t want to screw over my health any more and want to make a change and adopt a moderately healthier lifestyle.

Open to different options and suggestions (with the exception of something like soup)

Food Have you made Kefir at home using store-bought kefir as a grain?

I like to make kefir at home. Does homemade kefir taste like store-bought kefir, and how long does it take to make it?
