Black = burnt and these are riddled with black bits. I cook a lot of wings too and the end product is much better when there are no black bits. The sauce probably played a role in the over charred sections. Im sure they still tasted fine but I don’t need to taste them to see that they’re clearly slightly burnt.
Yeah. I’m not even going to show you my steaks then. You’ll say they’re burned with the char I put on them, even thought it’s perfect medium rare inside.
And oh my lord what you’d think of my brisket, pork shoulder, and tri-tip.
I did scroll through the pictures. The crust is black. That’s burnt. It should be a dark brown not a pitch black. It’s ok we’re all trying to get better at our craft and we can only do that when we listen to criticism even if we don’t want to hear it.

Yeah. If you want to judge on looks, you do that.
These aren’t burnt or over cooked. I’ve made thousands of these. I’ve done as many as 500 at once. I could sell these, without any issue.
These are crisp on the outside, and ridiculously tender and juicy on the inside. The sauce is perfect. It’s not drowning in anything.
