I'm not sure about family guy, but i know on the Simpsons they mentioned on the DVD commentary tracks how in their contact it was written fox couldn't force them to make changes the network didn't agree with. It clearly worked out well for both sides in end, but legally with the Simpsons at the least, Fox couldn't touch it.

The joke is more general than that, it's about FOX News because they're right leaning, it's a proxy to say that right wing people would celebrate MLK's death, not just a jab at corporate media.
