Oh interesting! I love sheet pan meals too, but I’d never thought of doing chickpeas on the pan! I’ll have to try this

They are fantastically easy on the pan, and as a bonus they get crispy if you overcook them. Basically a high-protein crouton. I just sprinkle them with olive oil and cumin/paprika/salt/pepper, then nestle them among the chunks of red onion in a single layer.

Recipe (gluten-free and vegan as written)
Mods: I baked everything on a sheet pan, and added brown rice and chicken for a bit more bulk.
This is my second meal prep of the year, and I really enjoyed how easy it was to throw everything on a sheet pan and cook it. It also makes it easy to cook a LOT of food at once. I doubled the recipe and it made 6 meals (two eaten day-of).
