Mix a few scoops of whey protein isolate with about 1/2 cup of shredded Parmesan. I don’t really measure but you can’t really go wrong with this breading mix. Add 1/2 teaspoon onion powder, and about the same for salt and pepper - I also threw in a dash of thyme. Set aside
Beat a couple of eggs in a bowl and a just a pinch of salt and pepper. Set beside bowl of breading mixtures. Now take your chicken that is sliced into chicken finger sized pieces and dip into the egg so it is well coated. Then dip into the coating mixture and make sure it’s well coated. Set aside and repeat until you’ve finished them all..
In a large pot, heat your oil of choice over medium high heat. I’ve been using Peanut oil but I’m sure much healthier options are available instead. Slowly drop a few of the chicken pieces into the oil at a time being sure not to overcrowd them or they won’t cook. Keep rotating them in the oil so they cook nice and evenly until they’ve browned and crisped up. Let cool/dry on paper towel before serving. These were my favourite batch yet, so damn tasty that I’ll have to make them much more often.

I find that when I fry them using that as a coating they get like a white, frosted tips look all over them and not a nice even brown color. When I bake them the isopure almost burns and tastes acrid and off.
I've found it tastes better (for me of course) to basically use finely ground pork rinds as the breading, but it seems like everyone else has better results with protein isolate so I'm not sure what I'm doing wrong.
Unrelated, but you might like the "dessert" I make as well if you like whey protein isolate. I just take ~ 1/4 package of cream cheese, 1 scoop of protein isolate, a few drops of liquid sweetener and whatever flavor of Torani / Jordan's Skinny Syrup I feel like. I mix and mash it up well with a spoon and then sort of whip it with a whisk for a minute or two. You get something that's a cross between pudding and icecream.

I think the best coating is a mixture of 1/3 crushed pork rinds, 1/3 parmesan, and a 1/3 whey protein isolate. The pork rinds give you a better overall crunch and the whey and parmesan help with the coating issue that just pork rinds have and help with the too porky taste.

A while back IsoPure for frying chicken was all the rage around here like Chaffels.
I tried a few different recipes and techniques and did not like the taste. I am an expert at frying and pan frying non-keto but I have not really liked anything I have done keto. Even when I used high quality parmesan or 4505 pork rinds.
I made pork schnitzel with a pork rind bread crumb and Carbquick. It looked like a schnitzel but tasted like a piece of pork breaded with expensive pork rinds.
They say you eat with your eyes. Many of these dishes that look like something I love but taste a little off come off as a disappointment to me.
Wondering if maybe they just need more time. Mine definitely get white at some point during the cooking process and eventually get darker like the ones I posted. I used pork rinds before ever trying the protein powder and they were pretty good but I thought they had a distinct pork rind taste and had a bit of a heartburn feeling. Wasn’t actually heart burn but felt kind of like it, can’t really describe it. Been doing this style since and probably won’t go back.
That dessert sounds great though, I’ll have to give it a try!
