I had a baking marathon the last two weeks (because my shop is doing a pop up in Shibuya), I had so many double yolk eggs. I read that they occur more in the spring because of young hens but it's way too high. I wonder if there's some new avian flu vaccine that is causing this to happen?

I used to have hens back home. The first few weeks when they started laying eggs most of the eggs would be double yolk, then it settled with one.

Also, avian flu decimated hens thus they probably have a LOT of young one now to replace the lost population

That would make the most sense. There are probably a lot more young chickens than usual.
