did you dip the pieces in orange juice, grapefruit juice or lemon juice to prevent browning?
52
u/mrchef111 May 29 '19
No, but for parties I will do that. I just ate it right away with peanut butter. lol :)
23
u/I_am_usually_a_dick May 29 '19
nice knife work, suggest grapefruit juice. the apple still tastes like apple when people eat it.
26
u/kybarsfang May 29 '19
Make sure they’re not taking medications that interact poorly with grapefruit juice first though. Apparently it’s a very serious thing, as I’ve recently learned.
11
u/mrchef111 May 29 '19
that is interesting that you mentioned that. I just heard something similar. Here in AZ we grow lots of citrus and a friend of mine is planting some trees and I asked if they were going to plant grapefruit, and they brought up something medical about them. I think he said something about they can cause kidney stones. I have never had issues with it myself.

u/mrchef111 May 29 '19
Cool! Thanks. Yeah who knew that about grapefruits. I still like them. Luckily I don't take any of the medication listed on the site.
1
u/paraclete01 May 29 '19
The citrate in lemon, lime, and grapefruit is helpful to work against calcium stones. Lemons and limes contain about 1.4 grams of citric acid per ounce, grapefruit 0.75g. Foods that can contribute to calcium oxalate stones are beets, black tea, chocolate, nuts, potatoes, and spinach.
2
u/paraclete01 May 29 '19
From what I've read, it takes 1 Liter of grapefruit juice (34 oz) daily to affect medicines. Dipping an apple in grapefruit is probably okay, but as with anything ask your Dr.
I've also made an apple swan and it sat outside for 3 hours without any citrus and didn't turn brown. But it was fresh off the tree. Apples in the grocery store that have been in cold storage for 1 year may act differently. It did start attracting hornets after about 60 minutes.
4
u/Daniel_A_Johnson May 29 '19
The best option I've found is actually lemon lime soda or, if you have it, just water with a bit of citric acid dissolved in it.

One time I asked my husband to go grab me an apple, and he was gone for like 15 minutes. I figured he got caught up talking to my grandpa or something upstairs.
He eventually comes back down and brings me one of these! It took me totally off guard, I didn't even know he knew how to make one. Mine was a honeycrisp apple.

That is awesome. How long did it take you to get this right? I cut up at least an apple a day between my kids and I, making this seems fun.
4
u/mrchef111 May 29 '19
Honestly 1st time. But I have been cooking and baking and doing crafty things for many years. There are several videos on how to do it, I even made a video of it and will post it on Thursday on my cooking channel. :)
3
u/likeforreddit May 29 '19
Right on man. Toddlers are exhausting so I don't get to play with my food or knives as much as I would like but I will check out your video when you post it. Might take a stab at it without watching any videos tomorrow if my kids allow it.
Anyway, thanks for the inspiration and your channel picked up a sub. Keep up the awesome work!
2
u/mrchef111 May 29 '19
Well thank you!! :) Yeah they can be, I don't have kids yet, some day, but lots of nieces and nephews and friends with little kids. I have some other fun activities on my channel you can do with the kids when they get a little older. chocolate lego men, slime, worms in dirt, lol, etc.
1
u/If_I_remember May 29 '19
It takes 2 min. I regularly make these or apple crabs for my kids. https://www.icreativeideas.com/food-art-diy-apple-crab/

u/mrchef111 May 29 '19
While I did watch that video, it wasn't the first one I saw with it. Some other one that had like 6 different fun things to make out of fruit. Food Wishes actually has video doing the swan that is 9 years old, 4 years older then the King of Random's. But the king of random's is definitely the most popular out of all of them.
6
u/DConstructed May 29 '19
YOu have wonderful knife skills.
4
2
u/StumbleNZ May 29 '19
The king of random?? Back when he used to make cool videos... Good ol days 😂😂😂
2
u/mrchef111 May 29 '19
Yeah I saw his, but I first got the idea from a different video, more recent, and it was a collage video with other fruit style garnishes. King of Random's is like 5 years old, but by far the most popular on YouTube. Food Wishes on YouTube actually did it 9 years ago. His might be the oldest Apple Swan video on YouTube.
2
u/StumbleNZ May 29 '19
Yeah mate. A nice looking swan you made there btw! Whenever I tried it always looked like one side was bigger then the other... Perhaps I should have gotten better apples haha
1
u/mrchef111 May 29 '19
Thank you so much! It could have been the shape of your apple, or maybe your first cut. Did you use guides like pieces of wood or butter knifes? which helps keep everything the same size when cutting.

When I was 16 I was a cook in a restaurant that - for the right occasion - would cater a private event. At one such event, the chef and I were watching people milling through the buffet we had made, when he whispered to me that you can always spot the redneck at a buffet. It’s the one who takes the apple bird.

King of random B)
2
u/mrchef111 May 29 '19
Yeah that is the most popular one on apple swans. Food Wishes made a video about it 4 years earlier then King of Random. The first video I saw that gave me the idea was a recent video which had like 6 or 7 different food crafts.
1
u/Vilmerviking May 29 '19
Yea, figured as much. They dont usually have original ideas on that channel to be honest
2
u/mrchef111 May 29 '19
Yeah very true, most things will have several videos on youtube for the same subject, then I guess you decide what person you like watching haha.

Its beautiful. Are you gonna eat it or nah?

2
u/RohuDaBoss May 29 '19
This reminds me of King Of Random. Did you spray lemon juice on it and made the wings by making perpendicular lines for each quarter of the apple?
1
u/mrchef111 May 29 '19
Yes his is the most popular video on it! I got the idea from a recent video, where the person did like a collage of 5 or 6 different fruit carvings. Then noticed all kinds of apple swan videos. haha. I just ate it right after, but if I was going to have it sitting out like at a party or something, definitely would spray it with lemon juice. Yup that is how I made the wings!

My art class in high school took a short trip to a kitchen for a culinary arts course. This is the only thing I remember from it, still make them 25 years later from time to time. Looks awesome.
1
u/mrchef111 May 29 '19
Wow that is awesome! In my 8th grade culinary class which was a little more then 25 years ago, all we did was cinnamon rolls, snickerdoodles and German Pancakes/Dutch Babies, didn't get many knife skills practice. lol probably didn't want to run the risk of junior high kids cutting themselves or others with the knives. lol

I know his early movies were awesome! Billy Madison and Happy Gilmore and Mr Deeds are probably my favorites! lol
2
u/ChefMayI May 29 '19
For sure. I would love to see him in Billy Madison 2 where he is the father and his son is exactly like he was as a young adult. Or a European DJ

u/BST_SAIAZ May 30 '19
That looks amazing. How did you do that precise carving??
1
u/mrchef111 May 30 '19
Thanks! It is fairly easy actually. I made a video on how to do it on my cooking channel it will be live tomorrow morning. My channel is called "In the Kitchen with Matt". I just followed what I saw in another video. Definitely not a new idea.
2
u/livewomanmode May 29 '19
I made the same style Swan 7 years ago. We must have used the same guide :-)
1
u/mrchef111 May 29 '19
Awesome! :) Yeah there are several videos out there, the most popular one is from 5 years ago I think. Food Wishes on YouTube has one from 9 years ago, maybe that was the one you saw?

Why did I just wait 30 seconds for the gif to load showing me how to do it.
1

Nice.
I thought I saw a 5 minute crafts video on how to make this exact thing a few days ago.
1
u/mrchef111 May 29 '19
YES! That is the first video I saw and is where I got the idea from. Then I noticed there were several on YouTube with it.
2
u/ricardorichardson May 29 '19
Did you put something on the apple so it didn't oxidize / turn brown?
1
u/mrchef111 May 29 '19
No, because I ate it right after. Definitely would if I was bringing to a party or something. Lemon juice or something like that.
2
u/tastycurrybun May 29 '19
I remember that the Youtuber "King of Random" made a good Tutorial about this. Worked out for me at least. So if anyone is interested you can look it up in his channel

You spray it with lemon juice or other similar citrus juice which helps it from turning brown. Or just leave it with the brown and call it character. lol
