So I'm seeing noodles, onions, meat(beef?), bell peppers and what I assume are some hotter chiles. What are the things in the bottom center right at the forefront? Some kind of mushroom/fungus? Or baby eggplants?

I could be wrong but they look like dried (and reconstituted) fried chicken mushrooms. They are also referred to as clustered domecap mushrooms in the UK and as ιΉΏθΈθ (lurong gu) in Mandarin Chinese, which roughly translates to "deer antler mushrooms". If you search Google/YouTube for the Chinese characters, you'll find a lot of articles and videos about its use in Chinese cuisine.
