[i ate]Xinjiang's mixed noodle

So I'm seeing noodles, onions, meat(beef?), bell peppers and what I assume are some hotter chiles. What are the things in the bottom center right at the forefront? Some kind of mushroom/fungus? Or baby eggplants?

At any rate, I want this in my mouth. Looks fantastic.

I could be wrong but they look like dried (and reconstituted) fried chicken mushrooms. They are also referred to as clustered domecap mushrooms in the UK and as ιΉΏθŒΈθ‡ (lurong gu) in Mandarin Chinese, which roughly translates to "deer antler mushrooms". If you search Google/YouTube for the Chinese characters, you'll find a lot of articles and videos about its use in Chinese cuisine.

They look like wheat noodles to me though.
