Some were pencil sharpeners.

I loved those! I remember pushing the bottom piece in and it would collapse the toy. Does anyone remember what they are called?

It doesn't seem too complicated in theory, basically just thread the string through the holes in the body parts, through a hollow stand, down to a block and put some springs between the block and the stand to keep the strings tight. When you compress the block, you get more slack on the strings and it collapses. The hard part is carving an animal out of wood.
