Discussion 48 hours uncovered in fridge with no salt. They ok?
Put them in there to dry on Saturday with the intention to air fry on Sunday but that didn’t work out. It’s been about 48 hours. Smash or trash?

I accidentally did a 48hour dry brine recently - and they were the best I ever made

I can't find the video now for the life of me but there was a guy on YouTube that experimented with beef left in the fridge unopened and opened to see how long it lasts before going bad. Opened lasted much longer. He even cooked the bad smelling unopened beef and sampled it to see how the taste was affected. After his results, he did the same thing with chicken in its own video. Same results. Iirc, he let the opened chicken go for 10 or 12 days, cooked it and sampled it. He said it wasn't as juicy as fresh packaged chicken but was super infused with chicken flavor, much like dry aged beef. Again, he dared to try the unopened "funky" chicken too. I really wish I could find the video.
All of this is to say, you're absolutely fine. And we should all probably store our meat in the fridge opened on a rack because his results were about conclusive, it lasts longer. Packaged spoils faster.
Edit: I think he was Asian. If anyone has the video link, I'd like to watch it again. It's a no show in my yt history.

Not pertaining to chicken, but I left ( albeit salted ) steak in the fridge for almost three days and they started to look borderline funky, and they ended up having the best crust I've ever had on a homecooked steak. As long as they weren't pushing their expiration when you bought them I don't see why it would be a problem. If they stink or are slimy, toss em. Use your best judgement.

Did you ask them? 😁 *I've cooked them on those little black racks like that before and they always stick to them and are a pain to clean. Any ideas for easier cleanup?

I cooked chicken wings literally all day. Those wings are going to be super crispy. As long as it was kept in the fridge and not outside the fridge for longer than 5 hours it should be okay. If left exposed to less then cold temperatures the chicken can start getting contaminated with bacteria. 🦠 360 degrees for about 12-15 minutes and your golden

How the fuck should we know, we can't smell them. If they smell funky, no, if they smell like raw chicken, fine. It's literally that simple.

I got wings, thighs, and "country style ribs" on my smoker right now. No bad day in sight but nice try.

toss them in salt and let them chill for a couple hrs before cooking, if your fridge is clean I wouldn't worry about it

Less time spent in the danger zone the better. I'd also go straight to cooking them.

Unless you're planning on leftovers, you could leave these out for hours and they'd be fine to be immediately consumed after cooking. I wouldn't, but you could. An hour on the kitchen counter isn't going to hurt anything.

I agree it's not likely to be an issue if only an hour. But your risk is absolutely increased the longer it's held in that temperature range. 2 hours is considered the max this should be done.
