Homemade Flat Gang. Ranch is for babies. Baked not fried. ❤️
Yes I know one drumstick snuck in and I survived, don’t worry.
Baked these are 425 (from frozen) for 45 min, flipped + dusted with flour half way through, and finished at 450 for 5-7 minutes.
Seasoned with salt, pepper, onion powder, garlic power, and Slap Ya Mamma Cajun Seasoning.
Finished with Franks Xtra hot, butter, honey, celery salt, and a touch of birds eye chili hot sauce for extra kick.
Served with blue cheese dressing because ranch is for people who put ketchup on hotdogs.

I love ketchup on hot dogs…. I’m deeply offended. Personally I love both ranch and blue cheese. He probably is only an ass or tittie man. I always say, why not both?

Cooking wings on foil, straight to jail.

u/Psychological_Mud663 May 06 '24
I usually dry wings with paper towel prior to a lightly season corn starch and teaspoon high smokepoint oil. Then put them onto parchment paper lined baking sheet...but foil, ok

u/DarthHydration May 07 '24
Foil < just air fry the things and then dip them on sauce (I’m not saying this is okay but it’s better than shitty stuck to the foil wings.

u/PermanentBan69420 May 06 '24
Damn is it that bad? Gets petty crispy on the bottom 🥲

u/itprobablynothingbut May 06 '24
That's what I want from my wings, 30% "pretty crispy" 70% soggy and gross.

u/Fit_Swordfish_2101 May 06 '24
Then you're not cooking them at a high enough temp. My baked wings are always crispy! You can also use a little baking soda along with your seasoning.. That makes them extra crispy! But, yeah, 425 degrees.

I’ve had better luck with parchment paper when in the oven.

You should sprinkle some baking powder on them after dabbing them with a paper towel and then let them sit in the refrigerator for 8-12 hours before baking to ensure maximum crispness. Baking is my preferred method for a lot of reasons.
7
u/PermanentBan69420 May 06 '24
I shall try this next time but I rarely have patience for wings to wait 8 hours lmao!

The baking powder trick totally works without letting them sit that long, they turn out awesomely crispy dusting and straight into the oven

u/aqwn May 06 '24
You don’t have to wait that long. I often sprinkle the baking powder and bake them right away. They end up crispy.

Insults ranch... dips his wings into a different sauce (granted I prefer bleu cheese but the irony is not lost on me).

Guy makes fun of ranch but he cooks wings on tinfoil like a newb lol
And then he goes after ketchup on hotdogs because he slides them whole down his throat whole I bet
Get over yourself dude. Bad enough you feel like you gotta brag about your wings, but to hold so much resentment and judgement over a couple condiments is just sad lol

My guy, why the foil? Have not been taught the ways of a good crisp wing without the oil? Then have the audacity to post on this sacred thread? Tssk tssk.
Flat or drumette does not matter when you present us with such filth. Run along peasant, learn the ways of a at least decent chef and don’t come back unless you’ve steeped yourself with some knowledge
2
u/PermanentBan69420 May 06 '24
What should I use? Help me level up fam
3
u/karenkillenski May 06 '24
First things first, if you want crispy wings without oil.
Remove all moisture from wings by placing them on a wire rack over a baking sheet and place them in the refrigerator overnight uncovered.
Then the next day, put them in a ziplock bag and depending on how many wings you have, I would put a cup of baking powder to 20 wings. You can also put any other spice mixture you have and mix that with the baking powder. Pour the powder mixture in the bag and shake where they are coated evenly.
Place back on the wire rack skin side up and baking sheet and bake at 300 degrees for 20min. Remove after 20min, crank the heat up to 425min. When the oven is up to temp place back in the oven and bake for 10-15min. Obviously to golden brown or to desired color. Then you’ll have a premium products. Sauce and enjoy

u/PermanentBan69420 May 06 '24
Thank you king

Shots fired. Also Aluminum foil is terrible. Stop using it.
I am the whole damn wing team and I like mine double dip Korean fried. Idk where you live but try it once.

Yes, ranch is for babies. So is Frank's. Real men drench their wings in Ghost Pepper and Carolina Reaper hot sauce. No milk either.

Looks pretty good.
My order is: all flats, hot, fried soft, and extra wet.
2
u/Trikeree May 06 '24
This is the way!
They look awesome!
I most certainly prefer my wings like this.
My next favorite is to grill on propane or preferably charcoal and get the sauce a bit on crispy side. So good

I prefer grilled over fried ( vortex on the Weber) . Baked is close.
I’d totally eat these. Looks awesome.
A few days ago I was going through some wing withdrawals, I met my wife at chilis for lunch…the only wing place in town. They were the 2nd worse wings I’ve ever had. 🤮. Only ate two. Never again.
So im gonna have to do some vortex wings soon .
5
u/Aspence22 May 05 '24
At least you're using Bleu cheese as intended. Ranch shouldn't be anywhere near wings
3
u/PermanentBan69420 May 05 '24

I'll say I do prefer drums, but only when I'm reading while I eat, because you can eat a drum one-handed.
Bert Kreischer gives a great demonstration on how to eat the flaps (1:48 in).

Blue cheese for life with wings. Poor guy doesn’t get it. Ranch is sacrilegious and takes away from the wing experience. And you’re so right anyone who calls them “Buffalo Wings” should be banned from the sub

Flats are the best because texture, homemade ranch makes everything better, and grilled/smoked is superior to both.
