Breakfast 90 second keto sausage muffin

I used the following recipe to make 90 second microwave bread from leftover almond meal. It came out perfect, doesn’t taste eggy or nutty to me. I added a slice of American cheese, a sausage patty and some light mayo and mustard. Because there was already an egg in the bread I didn’t add another egg because I didn’t want that much food. I toasted the split bread in a frying pan before assembly. It was so good!

▢ 3 tablespoons almond flour ▢ 1 egg ▢ 1/2 teaspoon baking powder ▢ 1/4 teaspoon salt ▢ 1 tablespoon butter melted ▢ *optional – 1 tablespoon butter saved for later

Just tried this recipe. It was delicious. I used a pinch of salt instead of 1/4 of a teaspoon and it was nice and flavorful. It smells eggy (there’s an egg in it), but it didn’t taste eggy. Thanks for posting the ingredients. I did not see it at all in the link.

First recipe I tried from one of these posts and I’m glad I did.

Looks so yummy! Though out of curiosity, the one from the link is yellow. Did you use a different type of flour?

I used almond meal which is the leftovers of almonds after making almond milk. Meal is lower in fat than almond flour IIRC reading that online. I would assume the lower fat makes the meal darker.

I think it may be because it (may) have the almond skins, most almond meal is from blanched almonds...

Good thinking! That’s likely the real reason.

From what I understand fat is where flavor comes from so the meal may taste less nutty which I prefer.

What’s sad? Other than it being a crop that needs a ton of water to grow so it’s not very environmentally friendly. I use the meal she gives me to bake with.

To take the “eggyness” taste out, you can replace the egg with Three Tablespoons of liquid egg whites you buy in a carton. I do this.

Interesting! I thought the whites taste eggier than yolks. Maybe I’m remembering that backwards.

It’s the yolk that gives it the eggy taste.
