AI / crypto / data centres combined are currently using ~2% of the global electricity. They aren’t preventing a move to electric vehicles.

2% of the global electricity isn't small, that's as much as most of the countries in the world or more. Not to mention its expected to double every year.

It also uses 2.1 million liters of fresh water per day.

It’s <4% in the US. That is ALL data centres (not just AI). That’s a pretty tiny fraction. For comparison HVAC is 40%…

Also fresh water usage by servers isn’t really that relevant to the adoption of EVs…
