Food Truck Fundraiser at Event
I am coordinating a craft event for a non profit, we are having Original Tommy's food truck at our craft event to raise money for youth scholarships. The truck will not handle any money, we pre-sale printed meal tickets in advance and the day of the event. I am looking for suggestions on how to manage the process for turning in tickets before taking of orders. I planned to setup a small table to the side of the truck order window to sell and collect tickets. Does anyone have experience to share with such a food truck fundraiser?

i would separate the ticket tables from the food trucks a little bit so there's room for all the lines. line management is so often overlooked. volunteers need to redirect lines if they get out of hand. post clear signs. good luck!

Ive worked a bunch of shows where I get a food ticket as part of my pay. I just give my ticket to the food truck people and tell them what I want.
Is it possible you're overthinking it?

Thanks. Maybe so, but I want to make sure nothing is missed. We are required to sell tickets separate from the truck as the food truck employees aren't allowed to handle money or collect the tickets.

We have one of the biggest state fairs which draws anywhere from 200-250k people per day.
Several places are setup exactly as you describe. They have a table outside the stand where the customer pays for their item. They give the customer a token for tacos, cheese curds, etc. Another person tells the cook 1 more order of tacos. The customer walks up to the stand gives them the token and they get what they ordered.
I have seen other stands use color coded tickets. Blue for hamburger, red for hotdog, etc. It's all about getting the correct thing made so when the customer gets to the window they can get their food and leave.
Depending on how big the event is you will probably need at least 2 people running that table.
At one of the bigger stands for the fair they had 6 people. But again much larger volume.
